Garden Soup


We love vegetables in this house
and with our diet of minimal processed foods,
we have to plan ahead for the busy months when we are both working full time.
So, every summer I throw together what I started calling Zuchinni Soup,
but now am going to start calling Garden Soup.


Ingredients:
1 lb. ground sausage *cooked* (I always buy local - it tastes best)
2 Lg. cans of diced tomatoes 
1 onion
1 green pepper
zuchinni
*Any veggies you want to add, after all, it's your garden soup. 
(This year I added green beans because I have been blessed with amazing friends that allowed me to go to their garden and pick 2 5 gallon buckets of beans!)

Simply bring everything to a boil and then let simmer until the veggies are tender.

**I divide this up into freezer bags once it has cooled and pull it out for those evenings in the fall/winter that are consumer by school functions/board meetings/laziness/etc.
