January Crockpot Challenge: Soup

We all have those goals we set at the beginning of each new year.  Whether you call them resolutions or not is up to you.  I think there is a small part of us that wants to be a fashionable, domestic goddess.

This link-up is a perfect way to motivate and hold each other accountable with some of those goals!

This month's crockpot challenge was soup.  It could be interpreted however you wanted and you could create whatever type of soup you wanted as long as it used a crockpot.  Marissa, Ashley, Margo, and I chose the crockpot because they are so easy, versatile, and economic.

For New Year's Day I made the traditional pork, black eyed peas, and greens dinner.  On a whim, I decided I wanted us to have spiral ham for our main dish.  Have I mentioned that it is just my husband and me in the house?  And, no, we weren't having company.  Despite the fact that I bought the smallest ham available, we still had a whopping ten pounder to enjoy.

Obviously, there were a lot of leftovers.  What does one do with leftover ham you ask?  After reheating, making grilled ham and cheese sandwiches, and freezing some...I decided to try my hand at an old family favorite: split pea soup.


Split Pea Soup
Ingredients:
Ham (preferably on the bone & as much or as little as you want)
1 lb. split peas (soaked overnight per pkg.)
Carrots
Onion
Celery
Basil, thyme, rosemary, salt, and pepper

Directions:
1. After soaking peas overnight, drain and return to pot.
2.  Add 8 cups of water, chopped carrots, onion, and celery (as much as you want).
3.  Bring to boil.
4.  Transfer contents into crockpot.
5.  Add hambone, season to taste, and allow to simmer in crockpot for 1-2 hours.

Serve with cornbread or biscuits. Yum!

Some of you may be thinking this is nasty or you hate peas.  Trust me when I say I had myself convinced for years that I hated pea soup until I finally allowed myself to try it.  It's quite tasty!  My husband thought I was gross when he first saw it and then I randomly got a text at work telling me how perfect the soup was during that particularly cold day.  Score!
