In this house we consume a lot of bananas. Carson loves half a banana with his breakfast and I usually put the other half in my morning shake. Lately I've become pretty addicted to chocolate covered cherry shakes so I haven't been using our bananas up.
I'm of the waste not want not mentality so throwing away half a banana or letting them turn brown and discarding them just won't work for me. Carson loves muffins, waffles, pancakes, you know...the stuff that's good for you. (Not)
So, I decided to take the ripe bananas and create a healthy muffin for my little guy to have in the mornings. They're also a great alternative to a cookie after dinner. He loves them and they aren't terribly awful for him. Winning!
To make you just need:
- 2 mashed ripe bananas
- 2 Tbsp. coconut oil
- 1 egg
- 1/2 c whole milk
- 3/4 tsp. vanilla extract
- 2/3 c. whole wheat flour
- 1/2 c. quick-cooking oats
- 1/4 honey
- 1 3/4 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- coconut oil spray
Preparation:
- Preheat oven to 375.
- Combine first 5 ingredients in medium bowl. Mix well and set aside.
- Whisk together last 6 ingredients in separate bowl.
- Combine mixtures together.
- Spray 12 muffin cups with coconut oil and fill with batter.
- Bake 16 minutes.
