As I was cleaning out one cupboard, I found the popsicle mold I purchased last summer so that I could make these birthday cake pops for my girlfriend and myself when she came to visit. I can't even find the recipe we used; to be honest they weren't brag-worthy, but these sound amazing!
Anyway, I started scouring the internet (let's be honest: PINTEREST) for healthy recipes for popsicles for my little guy. I haven't been able to bring myself to purchase the sugar-y ones for him even though I know he'd delight in them. The sugar-free ones are a chemical sh*t-storm and the healthy ones will eat up my grocery budget in one week!
So homemade it is...
I found lots of recipes for orange creamsicle pops and I'm a pretty big fan of the orange creamsicle so I decided to try one. But they all called for things I didn't have at home and that didn't sound really "healthy" (like condensed frozen orange juice?) So I decided to wing it.
And I hit the popsicle on the head! Winner!
All I did was combine 1 cup of 100% OJ with 1 cup of vanilla Greek yogurt and pour it into the molds. I let them freeze overnight and sure enough - yummy!
Don't believe me? Look at that face.
I asked him for a bite and he looked at me and shook his head with a big grin on his face. Stinker.
