Shift Shop Meal Plan Recipe: Banana Berry Muffins



I started to struggle in the middle of week 2 with the amount of protein on this meal plan.  Mainly due to the fact that I am not a huge fan of meat in general and most of the foods are very savory and high in protein.

The first 2 weeks I would bring egg cups to school for my morning snack and they were delicious!  By week 3, I needed something different and I had found this recipe for 3 ingredient muffins and adapted it to fit within the meal plan for The Shift Shop.  I looked forward to these and they didn't disappoint!  They were the touch of sweetness I needed in my day and helped me to get in another protein (week 3 requires 5/day for my plan).


I will definitely keep these on my meal plan rotation and maybe even add some chocolate chips when I'm no longer in The Shift Shop test group.

If you make them the way I've shared 3 muffins is 1 red, 1 purple when using the portion control containers.
